Any time you get an excuse to eat a cookie for breakfast, it’s going to be a good day! I learned how to make these in 9th grade home economics class and they’ve been a favorite of mine ever since! The original recipe calls for raisins, but I hate raisins so I use chocolate chips instead.
| 1/2 c. raisins | 1/2 c. oatmeal |
| 1/2 c. Wheaties | 1/4 tsp. baking soda |
| 1 c. flour | 1/4 tsp. salt |
| 1/4 tsp. baking powder | 1/2 c. shortening |
| 1/2 c. brown sugar | 1 egg |
| 1/4 c. sugar | 1/2 tsp. vanilla |
| 1/2 c. coconut |

- Mix in large bowl: raisins, Wheaties, coconut, oatmeal, flour, baking powder, baking soda, & salt.

- Mix in a separate bowl with electric mixer: sugars and shortening.

- Add egg and vanilla.

- Stir two mixtures together until combined.

- Measure 1/3 c. dough for each cookie. Put on a lightly greased cookie sheet and flatten
to 4 1/2 in. round.

- Bake at 375 ° for 10-12 minutes. Makes 6 large cookies.
